Produced from blackstrap molasses and fermented for two full weeks in open wood vats using the distinctive Schizosaccharomyces pombe (S. pombe) yeast strain, this spirit embraces techniques rarely found in modern American distilling. A full 40% fresh dunder is incorporated into fermentation, creating remarkable depth, complexity, and unmistakable character before a single drop reaches the still.
 
Rather than chasing neutrality, this rum celebrates fermentation itself—delivering layers of ripe tropical fruit, fresh sugarcane, green banana, citrus zest, olive brine, warm spice, and earthy funk with exceptional texture and length. One of Mainland Rum's most distinctive releases, the 'forever sipper' - this seven-year-old Florida rum spent its entire maturation in a full 500-liter sherry cask, producing exceptional richness and complexity. With the originating distillery no longer in operation, this bottling represents a finite chapter in American rum history.
 
The nose opens with dried figs, raisins, orange marmalade, roasted almonds, and polished oak before evolving into layers of dark chocolate, baking spices, ripe cherries, and rich molasses.
